I like to eat this cake when still tempered but it´s also very, very good after a day or two in the fridge. But it will not last for two days though...
The cake:
200 gr butter
225 gr dark chokolate
170 gr sugar
1 teaspoon vanilla sugar
Zest from 1/2 orange (can be skipped)
50 gr almond flour
5 eggs
Melt the butter and the chokolate carefully. Take it off the heat and whisk in the sugar, vanilla sugar , the orange zest and almond flour. Whisk the eggs in a seperate bowl and then into the chocolate mix. Have baking sheet in a pan measuring about 25x30 cm and bake it on 175 grC for 25 minutes.
The Cream:
300 gr dark chocolate
350 gr soft butter
400 g icing sugar
2 teaspoons vanillasugar
0,3 liter cream (for whisking)
zest from 1/2 orange (can be skipped)
a little salt
Melt the chocolate carefully. Whisk the butter and icing sugar until white and fluffy. Add the vanilla sugar, salt, zest and melted chocolate and mix until well blended. Pour in the cream, a little by little, while whisking.
Have the cream on top of the cake and enjoy! You can of course eat it with some berries or fruit ... or why not take it all the way: with salty caramel sauce and peanuts!
