The barley is full of good things for our body. It is rich in beta glucan which is known for its cholesterol lowering effect. The barley can protect against heart troubles, cancers, diabetes and control the blood sugar. As if that wasn´t enough; the barley porridge is also filling and it tastes good. It´s perfect for breakfast, but also for lunch or a as an evening meal (in Norway we call it kveldsmat). No reason for not eating it I would say!
2 dl barley
1 liter full fat milk
1/2 teaspoon salt
Leave the barley in water over the night. Pour off the water. Boil the milk, add the barley and simmer for 30-40 minutes. Stir every once in a while and add the salt in the end.
Eat it the way you like it. I prefer butter, honey, some nuts and maybe fruit or berries. The porridge is also good cold, so leave the rest in the fridge and eat what´s left of it tomorow.
